Vinification: Harvested in late October once the fruit had achieved optimal ripening and complexity. Pressed and cold fermented in stainless steel tanks, after fermentation it was transferred into Hungarian Oak barrels for 12 Months. Fined and filtered before bottling.
Tasting notes: Complex and elegant with subtle oak intertwined throughout. Fruit sensations of rock melon and pear dance with almond, vanilla, and cedar notes on both the nose and medium bodied palate. Subtle ripe apple, hazelnut, lemon zest and pastry sensations add complexity. A sense of minerality wafts in and out of the wine. Drink 2021-2025
Serving suggestions: Great with poultry, pork, cream sauces (imagine seared pork medallions in a mustardy, herby cream sauce) , young cheeses and anything wrapped in puffed pastry.
