Named for the windsock that flies over the farm indicating wind strength and direction to local pilots, this bold, dry and full-bodied rosé is Ontario’s most high-flying pink.
"This is a wine that I have desired to make for a very long time. Achieving a scenario where the fruit sensations are ripe but NOT accompanied with elevated Brix is a backwards dynamic and not easily achievable. Vintage 2018 and one block of Cabernet Sauvignon was identified by Chris Protonentis (assistant winemaker) as being one that had this potential. We purchased the fruit, hand harvested and sorted it, cold soaked for 5 days after crushing, cool fermented in stainless steel then aged for 8 months in French oak barrels. It is billed as “Ontario’s highest flying Rose” as it comes in at $35.95 per bottle. The package is a heavy weight flint vodka bottle that gives the wine the presence on the table that it deserves. "
Tasting Notes The bright pink colour suggests fun, sweetness and whimsical, yet this wine is anything but that. Oak and red berry sensations on the nose allude to the weight of the wine. Structured tannins with vanilla, cedar, crab-apple, subtle mint and red berries along with an undertone of tobacco flow throughout this wine. Dry. Weighty. Round. Medium-bodied. Unique. Serve just off room temperature like a red wine. Enjoy with veal, pork, cream sauces and poultry.
