-cool fermented and hand plunged twice daily for 10 days after 3 days of cold soaking
-a total 30 days on skins with continued hand plunging daily.
-100% malolactic in oak. 50% French, 50% American with 60% of the barrels being new. Aged 22 months in barrique

The density and extraction displayed in the nuances and palate are ones that only the best of vintages / growing conditions can create. Spice, cedar, ripe black fruits dominate the nose with a level of concentration not seen from this vineyard before. The intense, rich, focussed palate has gripping yet youthful tannins, cedar box, black fruits, meandering throughout the opulent palate. Lifted cheery pie, pencil shavings, mint, chocolate and dried tobacco elevate from the glass. The finish is warm, firm and complicated. Pair this classic with lamb, pastas, dark chocolate, red meats, semi-hard to hard cheeses, and sausages.
