Named for Sue-Ann’s Great-Great-Grandfather, Elisha Staff, a man known for his unwavering commitment to farming, family and community. This French barrel-aged Chardonnay displays parallel commitment to its structure, fruit and body.
Complex and elegant with subtle oak intertwined throughout. Fruit sensations of rock melon and pear dance with almond, vanilla and cedar notes on both the nose and medium bodied palate. Subtle ripe apple, hazelnut, lemon zest and pastry sensations add complexity. A sense of minerality wafts in and out of the wine. Drink 2018-2021. Great with poultry, cream sauces, young cheeses and anything wrapped in puffed pastry.

2016 was an above average warm and dry growing season peppered with perfectly times precipitation.
Light cropped Chardonnay was harvested early October with developed notes and good maturity.
Cool fermented in stainless steel with selected yeast.
Aged for 9 months in a 5000L French oak cask.
No fining. Minimal filtration required.

This Niagara white wine is made from Chardonnay grapes and is named for winemaker Sue-Ann Staff's great great grandfather Elisha Staff. This wine was aged in French oak barrels. Loved this rich, round creamy and buttery chard. Well balanced, full bodied, medium acidity. Blanched almond croissant, baked apple persistence. Pairs with roasted or bbq chicken. Tasted 2016 vintage in May 2018.
