An Ontario original. Aromatics of lemon oil, white flowers and vanilla with an undertone of nuttiness lift from the glass. The dry bright palate is medium bodied with buttered toast, tropical sensations of papaya and guava plus citrus notes of lemon. Complex and evolving. The lengthy clean finish alludes to the longevity of this wine. Enjoy with seafoods, poultry, pasta carbonara, medium aged and hard cheeses, substantial appetizers and pork dishes.

-troublesome Viognier and darling Riesling were all hand harvested exclusively from estate vineyard in Jordan, ON, sub appellations 20 Mile Bench and Vinemount Ridge hence grown on thin clay soils with escarpment limestone rock beneath
-Chardonnay originated from Niagara on the Lake
-2016 – very warm year, harvested early to retain acidity and aromatics
-low yields with tiny berries resulting in juices with exceptional flavour and dimension
-all 3 components were kept separate throughout their cellar stages and treated very differently
-Viognier was fermented and aged in re-coopered and re-toasted French oak barriques for a total 11 months, contributing intense oak, floral and elevated alcohol to the wine.
-Chardonnay was fermented and aged on lees in a 5000L French oak cask for 11 months, contributing mid-palate and richness
-Riesling was cool fermented and aged in stainless steel. It contributes acidity, reduces alcohol and adds a touch of sweetness
-assemblage created just before botting, 43% Viognier, 33% Chardonnay and 24% Riesling
