The Chestnut Tree Cabernet Francs are vinified from 100% estate fruit from the our vineyard within the Vinemount Ridge appellation, with its angular clay soils and cool growing conditions.
The wine was cool fermented and hand plunged twice daily for 10 days after 3 days of cold soaking, a total of 30 days on skins. Aged one year in French and American oak, the wines were then transferred to two oak barriques that formerly held tequila and cognac for 11 months. Only 20 cases of each wine were produced.
These wines were made for cellaring. Drink between 2022 and 2030. Full winemaking and tasting notes to come!
