2013 Fancy Farm Girl
-Riesling harvested exclusively from the estate vineyard in Jordan, ON, sub appellation 20 Mile Bench
-young vines grown on thin clay soils with escarpment limestone rock beneath
-2013 – cool year hence acidity nicely retained in fruit, low yields with tiny berries resulting in 17.8 Brix, 12.5 g/L T.A. and 2.9 pH
-hand harvested then sorted and whole cluster pressed resulting in low juice yields and low phenolic profile
-cool fermented in stainless steel over 3 weeks with selected yeast to maximize aromatics and showcase the terrior
-left on gross lees for 5 months after primary fermentation to increase base wine richness and weight
-secondary fermentation completed in this bottle, hence “Traditional Method” methodology
-retained on lees for 6 months in the bottle to improve complexity and retain fruit notes
-disgorged December 2014 utilising 2010 Merlot as the base for the dosage liqueur

Lively, racy and delicious! The effervescence races up the glass with tiny bubble size providing for a great sight in the glass. A classic complex nose of bready, saltine crackers dominate while cranberry and strawberry linger beneath. The full mouth feel is elegant, dry with impressive movement between developed notes of cashew, crackers and dough with fruit notes of cranberry and rhubarb. The toasted complex finish is dry and lengthy. Enjoy with soft cheeses, subtle nuts (cashews, almonds, etc), white meats, seafood, fluttering eyelashes, subtle shoulder shimmies and a flirtatious attitude.
