    Tasting Notes:
    Light colour with cool climate green hues.  Lifted aromatics pairing nuances of citrus fruit such as lime zest and white grapefruit with subtle mineral that only bench fruit can create.  The semi-dry, refreshing palate is clean and fruit driven.  Citrus and minerality reappear on the palate joined by Granny Smith apple, white peach and honey.  Zippy and mouth-watering.  Enjoy with appetizers, chicken, poultry, seafood, fish, mild cheese, or on its own.  Great with a frivolous culinary adventure or the simplest of cuisine.

With a modest 11.5% alcohol, it’s easy to enjoy this wine with brunch, lunch or dinner. This is the quintessential summer sipper. It’s friendly, thirst-quenching and will leave you wanting to top up your glass.

    Tasting Note: On the nose, this white blend delivers complex aromas of bright lemon, white grapefruit, peach and honey with notes of mineral and spice. The palate is fresh, crisp and full of citrus, Granny Smith apple, peach and mineral flavours. This off-dry wine is perfectly balanced with just the right amount of citrus-like acidity. The finish is mouthwateringly refreshing.

    Enjoy With: Fish, seafood, chicken, pork, mild cheese, salads or spicy dishes. It’s also great all by itself.

    Terroir / Region: The Niagara Peninsula is divided into several small sub-appellation wine growing regions, each with its own unique mix of soil, micro-climate and topography called terroir. Fruit for this wine is grown on the Staff family farm located in the 20 Mile Bench appellation near the town of Jordan. Here, rolling hills composed of clay and limestone provide the grapes with excellent growing conditions.

    Producer: Farming and grape growing are in winemaker Sue-Ann Staff’s DNA. Her two hundred year old farm has seen five generations of family work and play. As one of Ontario’s leading winemakers, Sue-Ann wanted to make a range of wines that was playful and reflected her personality.     -harvested exclusively from the estate vineyard in Jordan, ON, Canada-four vineyard parcels ranging from 7 to 19 year old vines grown on thin clay soils with escarpment limestone rock beneath were blended for this wine-2014 – warm year with decent precipitation hence harvested early to retain acidity nicely in the fruit-low yields with tiny berries resulting in 19.5 Brix, 10.1 g/L T.A. and 3.0 pH

    Bacon & Onion Marmalade Focaccia

    Ingredients:
    • 10 medium onions or less if they are big, sliced
    • 5 bacon slices, minced
    • 2 teaspoons minced garlic
    • 2 tablespoons Worcestershire Sauce
    • One prepared Focaccia Bread Dough
    • Olive oil for brushing
    • One small potato very thinly sliced
    • 1/4 cup goat cheese, crumbled
    Directions:
    • Peel and slice (thick slices) the onions (if you slice it too thin it will all disappear and become just a mush). In a big heavy pot, cook the minced bacon until crispy. Add onions, minced garlic, and salt and black pepper to taste.div>
    • Cover and cook over low heat, stirring from time to time, about 30 minutes. Add the Worcestershire sauce. Cook over low heat, still covered, another 30 to 45 minutes, or until mixture have a consistency of marmalade.div>
    • Top the focaccia dough with crumbled goat cheese, the onion marmalade, and the potatoes sliced thin. Bake according to the directions of the focaccia dough.
