This is an immensely satisfying wine from start to finish. The wine's suggestions of rich, ripe currant, blackberry, and plum on both the nose and the palate are balanced by hints of cedar, pencil shavings and tobacco. This is a full-bodied Franc with grippy tannins, delicious on its own or paired with aged Cheddar, red meat, charcuterie, and dark chocolate.
Sue-Ann vinified this Cabernet Franc with 100% estate-grown fruit, hand-harvested in the last week of October 2018. The grapes remained on skins for 28 days with alcoholic and malolactic fermentation happening simultaneously during this time. After pressing and light settling, the wine was transferred to French and American oak for 22 months of barrel aging.
