Sweet Potato & Black Bean Sliders
Author: Cookie & Kate, then “Sue-Ann-ized”
Yield: 8 burgers or 16 sliders
Ingredients:
1 ½ lbs sweet potato (or yams) fully cooked and cooled, skinned and mashed
1 cup quinoa, cooked and cooled
1 cup quick cook oats (blended if preferred)
1 can (15 oz) black beans, rinsed and drained
½ small red onion, small diced
½ cup cilantro when chopped
3 teaspoons cumin powder
2 teaspoons chili powder
2 teaspoons smoked paprika
½ teaspoon (max!) cayenne pepper
½ teaspoons salt
vegetable or peanut oil for searing
Instructions:
Mix all ingredients as described above in a large mixing bowl. Used a potato masher if necessary (it is okay to mash a few of the black beans).
Form into patties and chill for one hour (or up the 3 days).
Heat pan to medium high with oil. Without crowding the pan, sear both sides of the sliders ensuring the edges are crispy and the heat penetrates through the patty – about 4 minutes a side.
Serving suggestions: on shaved lettuce; with chipotle mayo; with siracha mayo; on toasted buns; with hummus; with guacamole; with tomato salsa; in pita pockets with a cucumber mayo / tzatziki sauce; etc
