2018 Windsock Rosé Cabernet Sauvignon

Windsock Cabernet Sauvignon Rosé is named for the windsock that flies over the farm indicating wind strength and direction to local pilots. This is Ontario's most high-flying pink!

"I'd wanted to make this wine for years. Finding Cabernet Sauvignon that's flavour-ripe without sky-high sugars is incredibly difficult, but in 2018, assistant winemaker Chris Protonentis identified a vineyard block that showed exactly that potential.

We purchased the fruit, hand-harvested and sorted it, cold-soaked it for five days after crushing, cool-fermented it in stainless steel, then aged it for eight months in French oak barrels.

The result is a rosé with uncommon depth, structure and character. We like to call it Ontario's Highest Flying Rosé. Bottled in a substantial flint glass bottle more often associated with premium spirits, it has exactly the kind of presence on the table that this wine deserves."

The Windsock Cabernet Sauvignon Rosé's bright pink colour suggests fun, sweetness and whimsy, but this wine is anything but that! The Windsock is a structured, weighty rosé. Aromatics of oak and red fruit complement the wine's complex palate. You will sense vanilla, cedar, crabapple, mint and red berries, with an undertone of tobacco. Dry. Weighty. Round. Medium-bodied. Unique. Serve just off room temperature like a red wine. Enjoy with veal, pork, cream sauces and poultry.
