Most people think of Icewine as a winter indulgence — something to sip beside a fire in January. But here's a secret from the winery: Icewine is one of the most versatile and exciting cocktail ingredients you can reach for on a hot summer afternoon.

Its intense sweetness, bright acidity, and concentrated fruit flavours make it a natural partner for spirits, sparkling wine, and fresh fruit. And because a little goes a long way, a few 375ml bottles of VQA Niagara Icewine can be the star of your entire summer entertaining season.

What Is Icewine?

Icewine is made from grapes that freeze naturally on the vine in the depths of a Canadian winter — typically at -8°C or colder. When those frozen grapes are pressed, only the intensely concentrated juice flows out, rich in natural sugars, acidity, and flavour. The result is a lusciously sweet wine with a clean, refreshing finish.

At Sue-Ann Staff Estate Winery, we produce VQA Vidal Icewine and Riesling Icewine from our estate vineyards in Jordan, Ontario on the Niagara Benchlands. VQA certification guarantees the grapes were grown in Ontario and frozen naturally on the vine — not artificially chilled, as some imported products are.

Icewine Martini

Elegant, simple, and surprisingly refreshing. The vodka lets the Icewine shine.

Ingredients

  • 2 oz VQA Vidal Icewine
  • 2 oz Vodka
  • Frozen grape for garnish

Instructions

Pour VQA Vidal Icewine and vodka over ice in a cocktail mixer or shaker. Stir gently, then strain into a chilled martini glass and garnish with a frozen grape.

Icewine Old Fashioned

A Canadian twist on a classic. The Red Icewine adds depth and a gorgeous colour.

Ingredients

  • 1 oz VQA Icewine
  • 1 oz Canadian Whisky
  • Cherries and orange slices for garnish

Instructions

In a rocks glass with ice, stir VQA Icewine and whisky together. Garnish with cherries and orange slices.

Icewine Bellini

Brunch just got a serious upgrade. Light, fruity, and utterly celebratory.

Ingredients

  • 2 oz Peach purée
  • 1½ oz VQA Vidal or Riesling Icewine
  • VQA Sparkling Wine to top
  • Lemon twist for garnish

Instructions

Pour peach purée into a chilled flute glass, followed by VQA Vidal or Riesling Icewine. Top with VQA Sparkling Wine and garnish with a lemon twist.
